Ingredients :

1 pork tenderloin
1/2 tbsp fennel, ground
2 tbsp cocoa powder, unsweetened
1 tbsp smoked paprika
1/2 tbsp kosher salt
1/2 tbsp black pepper
1 tbsp extra virgin olive oil
3 green onion

Directions :

1. Remove the silver skin and the connective tissues from the pork loin.
2. Combine the rest of the ingredients in a mixing bowl, then rub the mixture on the pork. Refrigerate for 30 minutes.
3. Preheat the wood pellet grill for 15 minutes with the lid closed.
4. Sear all sides of the loin at the front of the grill then reduce the temperature to 350°F and move the pork to the centre grill.
5. Cook for 15 more minutes or until the internal temperature is 145°F.
6. Remove from grill and let rest for 10 minutes before slicing. Enjoy
