Ingredients :

3.5 lb. chicken
Vegetable oil
Salt and pepper to taste
2 tablespoons hot sauce
1 quart buttermilk
2 tablespoons brown sugar
1 tablespoon poultry dry rub
2 tablespoons onion powder
2 tablespoons garlic powder
2 1/2 cups all-purpose flour
Peanut oil

Directions :

1. Set the Traeger wood pellet grill to 200 degrees F.
2. Preheat it for 15 minutes while the lid is closed.
3. Drizzle chicken with vegetable oil and sprinkle with salt and pepper.
4. Smoke chicken for 2 hours and 30 minutes.
5. In a bowl, mix the hot sauce, buttermilk and sugar.
6. Soak the smoked chicken in the mixture.
7. Cover and refrigerate for 1 hour.
8. In another bowl, mix the dry rub, onion powder, garlic powder and flour.
9. Coat the chicken with the mixture.
10. Heat the peanut oil in a pan over medium heat.
11. Fry the chicken until golden and crispy.
12. Tips: Drain chicken on paper towels before serving.
