Ingredients :

2 C. low-sodium soy sauce
1 C. dry white wine
1 C. water
½ tsp. Tabasco sauce
1/3 C. sugar
¼ C. salt
½ tsp. garlic powder
½ tsp. onion powder
Freshly ground black pepper, to taste
4 (6-oz.) salmon fillets

Directions :

1. In a large bowl, add all ingredients except salmon and stir until sugar is dissolved.
2. Add salmon fillets and coat with brine well.
3. Refrigerate, covered overnight.
4. Remove salmon from bowl and rinse under cold running water.
5. With paper towels, pat dry the salmon fillets.
6. Arrange a wire rack in a sheet pan.
7. Place the salmon fillets onto wire rack, skin side down and set aside to cool for about 1 hour.
8. Set the temperature of Traeger Grill to 165 degrees F and preheat with closed lid for 15 minutes, using charcoal.
9. Place the salmon fillets onto the grill, skin side down and cook for about 3-5 hours or until desired doneness.
10. Remove the salmon fillets from grill and serve hot.
