Ingredients : 

2 large-sized sweet potatoes, peeled and quartered
1 medium-sized zucchini, sliced
1 Serrano pepper, deveined and thinly sliced
1 bell pepper, deveined and thinly sliced
1 – 2 carrots, cut into matchsticks
¼ cup olive oil
1 ½ tbsp. maple syrup
½ tsp. porcini powder
¼ tsp. mustard powder
½ tsp. fennel seeds
1 tbsp. garlic powder
½ tsp. fine sea salt
¼ tsp. ground black pepper
Tomato ketchup to serve

Directions :

1. Put the sweet potatoes, zucchini, peppers, and the carrot into the basket of your Air Fryer. Coat with a drizzling of olive oil.
2. Pre-heat the fryer at 350°F.
3. Cook the vegetables for 15 minutes.
4. In the meantime, prepare the sauce by vigorously combining the other ingredients, save for the tomato ketchup, with a whisk.
5. Lightly grease а baking dish small enough to fit inside your fryer.
6. Move the cooked vegetables to the baking dish, pour over the sauce and make sure to coat the vegetables well.
7. Raise the temperature to 390°F and cook the vegetables for an additional 5 minutes.
8. Serve warm with a side of ketchup.
